The belief that 'calories in and calories out' count is out-dated. As we reduce calories the metabolism slows down, so when you start to revert back to eating 'normally' again, that weight goes back up. But the weight is compositionally a different make-up.
Do not be tricked into believing a plateful of fruit to be 'healthy'. There are certain sugars which includes fructose (fruit sugar) which still impact our very important organ, the liver. You will learn about the sugar loading properties of certain foods.
